Peel and finely chop the garlic. Trim the green beans and cut the green beans and asparagus in half. Coarsely chop the hazelnuts. Spread the garlic, asparagus, and green beans on a baking sheet. Soak the raisins for 15 min. in warm water. Toast the pine nuts in a dry pan.<br \/>\n2. Wash the fennel and boil it for 10 min. in plenty of boiling water. Drain the fennel and finely chop it.<br \/>\n3. Drain the raisins and put them in a pan with olive oil, season with a little salt and pepper. Add the sardines with their liquid and the anchovy fillets in pieces. Then cover the pan and turn off the heat.<br \/>\n4. Cook the pasta al dente and add salt. Drain and mix the pasta into the pan with the sauce and sardines.<br \/>\n5. Finally, sprinkle the pine nuts over the pasta and drizzle the whole dish with a bit of lemon juice and garlic oil.<\/p>\n<p>&nbsp;<\/p>\n<hr \/>\n<p>&nbsp;<\/p>\n<p>Risotto funghi porcini<\/p>\n<div class=\"bodyText\">\n<h2>Risotto with mushrooms<strong><img loading=\"lazy\" decoding=\"async\" class=\"alignright wp-image-20907 size-thumbnail\" src=\"https:\/\/olivery.com\/wp-content\/uploads\/2022\/10\/olivery-risotto-18-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" \/><\/strong><\/h2>\n<p>The perfect risotto takes time, attention, and a bit of patience. But the result is well worth it. A combination of the tastiest winter flavors.<\/p>\n<p><strong>Serves 4 to 6<\/strong><\/p>\n<ul>\n<li>1.5 liters wild mushroom broth<\/li>\n<li>A few handfuls of wild forest mushrooms (think fresh chanterelles, chestnut mushrooms, oyster mushrooms, and shiitakes)<\/li>\n<li>3 cloves garlic<\/li>\n<li>1 shallot<\/li>\n<li>2 stalks celery, finely chopped<\/li>\n<li>400 grams <a href=\"https:\/\/olivery.com\/product\/olijfolie-voor-bakken-2-x-500-ml-risotto-cadeau\/\">risotto rice<\/a><\/li>\n<li>1.5 dl white wine<\/li>\n<li>A few sprigs of thyme<\/li>\n<li>Lemon juice from half a lemon<\/li>\n<li>Piece of grated Parmesan cheese<\/li>\n<li>Two handfuls of hazelnuts, toasted<\/li>\n<li>Arugula to serve alongside<\/li>\n<li><a href=\"http:\/\/www.liquidodoro.com\/nl\/al-tartufo\">Truffle olive oil<\/a><\/li>\n<li>Splash of <a href=\"https:\/\/olivery.com\/product\/refill-eenmalig-2x\/\">extra virgin olive oil<\/a><\/li>\n<li>Sea salt and pepper<\/li>\n<\/ul>\n<ol>\n<li>Heat a generous splash of olive oil in a large pan and saut\u00e9 the shallot and garlic until the shallot is translucent. Add the risotto rice and stir briefly with a wooden spoon.<\/li>\n<li>Turn the heat up high, pour the white wine over the rice, and keep stirring. The alcohol will now evaporate, but the flavor will soak into the rice grains.<\/li>\n<li>Turn the heat down again and add the broth and thyme while continuing to stir. Repeat this process until the rice grains have absorbed almost all the broth. Just before the end, add the celery so it stays nice and crunchy. Keep stirring until the rice is al dente.<\/li>\n<li>Meanwhile, in another pan, saut\u00e9 the mushrooms with salt, pepper, and the lemon juice.<\/li>\n<li>Remove the risotto from the heat, add \u00be of the wild mushrooms, and season with a bit more salt and pepper. Stir the Parmesan cheese through the risotto so it becomes creamy.<\/li>\n<li>Serve the risotto on deep plates and top with the remaining wild mushrooms, arugula, the toasted hazelnuts, and a generous splash of truffle oil. Optionally add some extra Parmesan cheese.<\/li>\n<\/ol>\n<\/div>\n<div class=\"bodyText\">\n<hr \/>\n<h4><\/h4>\n<\/div>\n<h2>Risotto with wild mushrooms and roasted cherry tomato<\/h2>\n<p data-pm-slice=\"1 1 []\">Super tasty, vegetarian, and this recipe basically always works. You make it, of course, with our premium extra virgin olive oil, <a href=\"https:\/\/olivery.com\/product\/il-riso-acquerello-carnaroli-risottorijst\/\">riso Acquerello<\/a> and <a href=\"https:\/\/olivery.com\/product\/balsamico-di-modena-1-medaglia-6-jaar\/\">oak-aged balsamic vinegar from Modena<\/a>. Good ingredients are half the job.<\/p>\n<p>Riso Acquerello is one of the best and most well-known rice producers in Italy. According to star chefs, it&#8217;s the Ferrari of risotto rice. After harvest, the carnaroli rice undergoes a year of aging in special cooling silos. As a result, this rice loses very little starch during preparation and absorbs a lot of moisture. The grains don&#8217;t stick together, but &#8216;ballano in bocca&#8217;: they dance in the mouth. Due to the high absorption capacity, the grains grow significantly in size and all the flavor ends up inside the grain instead of outside it. That&#8217;s exactly what you want.<\/p>\n<p data-pm-slice=\"1 1 []\">Before you start, a quick side note about risotto. Don&#8217;t stir it with a fork in the pan. That damages the grain (and the pan too, of course). Make broth in a small pot, put the rice in water, maybe stir briefly with a wooden spoon, and then leave it alone. Definitely don&#8217;t stir when the rice isn&#8217;t covered with broth. Mamma mia, it&#8217;s not fried rice.<\/p>\n<p>And yes, a nice bottle of white wine belongs too. Risotto should swim a little.<\/p>\n<p><strong>Ingredients for (2 people): <\/strong><\/p>\n<ul>\n<li><a href=\"https:\/\/olivery.com\/product\/il-riso-acquerello-carnaroli-risottorijst\/\">250 gr Acquerello<\/a> (100% Carnaroli rice)<\/li>\n<li>300 gr mushrooms<\/li>\n<li>1 shallot<\/li>\n<li>2 cloves garlic<\/li>\n<li>1 liter water<\/li>\n<li>2 mushroom bouillon cubes<\/li>\n<li>Fresh parsley<\/li>\n<li>Parmigiano Reggiano 24M<\/li>\n<li>Cherry tomatoes<\/li>\n<li>Pepper mill<\/li>\n<li>About 1.5 dl white wine<\/li>\n<li>Splash of <a href=\"https:\/\/olivery.com\/product\/balsamico-di-modena-1-medaglia-6-jaar\/\">balsamic vinegar<\/a><\/li>\n<\/ul>\n<p><strong>How to make it:<\/strong><\/p>\n<ol>\n<li>Set the oven to 180gr and put the tomatoes on the vine with oil, a splash of balsamic vinegar, pepper and salt in the oven for an hour, and pour yourself a glass of wine.<\/li>\n<li>Put about 1 liter of water on the stove with 1.5-2 bouillon cubes. You might have some broth left over.<\/li>\n<li>Take a wide saut\u00e9 pan or soup pot with a generous layer of olive oil. Heat the oil, chop the shallot and add it with the pressed or sliced garlic. Let it saut\u00e9, but not brown. Add the packet of rice and let it saut\u00e9 briefly too. Deglaze with a bit of white wine. Not too much, since you&#8217;ll drink the rest with the dish.<\/li>\n<li>Once the wine has been absorbed, you can add broth.<\/li>\n<li>Stir the risotto occasionally with a wooden spoon and add more broth once it&#8217;s absorbed. It&#8217;s best to add broth and only then stir. This way you damage the grains less. It can be al dente but shouldn&#8217;t have a hard core anymore.<\/li>\n<li>Meanwhile, finely grate the Parmesan cheese.<\/li>\n<li>Cut the mushrooms into strips and fry them over high heat with a pinch of salt and plenty of pepper.<\/li>\n<li>Put the risotto on a deep plate, place a string of roasted tomatoes next to it, and the mushrooms over the risotto. Garnish with freshly chopped parsley.<\/li>\n<\/ol>\n<p>Buon Appetito.<\/p>\n<hr \/>\n<h4><\/h4>\n<h2><strong>Skin-fried sea bass<\/strong><\/h2>\n<p>Sea bass is a beloved fish in Italy. The silver skin of sea bass is so tasty that it&#8217;s a shame to remove it. Hence this recipe for a Trenette al Pesto. But the Spanish are not so bad either. Gazpacho is a Spanish dish. It&#8217;s a soup, with lots of fresh vegetables and herbs. Cut the cucumber into rough pieces. Keep some nice pieces aside for the garnish.<br \/>\n<em>(Optionally you can peel the cucumber, but this is not strictly necessary. The skin provides some &#8216;structure&#8217; in the gazpacho.)<\/em><br \/>\n2. Clean the bell peppers, onion, and garlic and cut into rough pieces.<br \/>\n<em>3a. Optionally you can peel the tomatoes. You do this by cutting a cross into the bottom of the tomatoes, blanching them briefly (until the skins curl up), and then rinsing them cold. Now you can easily pull off the skins. But we don&#8217;t mind coming across a somewhat coarser piece here and there, so we skip this step.<\/em><br \/>\n3. Cut the tomatoes into rough pieces. Put the tomatoes with the garlic, onion, cucumber, and bell pepper in a blender and blend finely (can also be done with an immersion blender).<br \/>\n4. Season the whole thing with the red wine vinegar, some fresh basil (and other Italian herbs), pepper and salt, and <a href=\"https:\/\/olivery.com\/product\/basilicum-olijfolie-250ml\/\">basil olive oil<\/a>. Chop the chili pepper finely. And cut the parsley coarsely<\/li>\n<li>Heat the olive oil in a large saut\u00e9 pan on high heat and fry the garlic, the pepper, and some parsley.<\/li>\n<li>Add the vongole, the white wine, and a soup spoon of pasta cooking water. You can count on making friends with those. Saskia from Ciao tutti has managed to unravel the &#8216;secret&#8217; recipe of master baker Luca Capilungo from Lecce and shares it with us.<\/p>\n<p><strong>Ingredients (15 pasticciotti)<\/strong><\/p>\n<p><strong>For the dough: <img loading=\"lazy\" decoding=\"async\" class=\"alignright size-thumbnail wp-image-10149\" src=\"https:\/\/olivery.com\/wp-content\/uploads\/2021\/10\/IMG_5128-300x300.jpg\" alt=\"\" width=\"300\" height=\"300\" \/><\/strong><\/p>\n<ul>\n<li class=\"p1\">1 kilo flour 00 (doppio zero)<\/li>\n<li>500 gram butter<\/li>\n<li>500 gram sugar<\/li>\n<li>6 eggs<\/li>\n<li>1 egg yolk to brush the pasticciotti with<\/li>\n<li>5 gram baking powder<\/li>\n<li>0.5 teaspoon vanilla<\/li>\n<\/ul>\n<p><strong>For the <em>crema pasticcera <\/em>(pastry cream):<\/strong><\/p>\n<ul>\n<li>400 gram sugar<\/li>\n<li>8 egg yolks<\/li>\n<li>150 gram flour 00 (doppio zero)<\/li>\n<li>1 liter milk<\/li>\n<li>1 lemon<\/li>\n<\/ul>\n<p><strong>How to make it. <\/strong><\/p>\n<ol>\n<li>Start with the <i>crema pasticcera. <\/i>Put the sugar in a large bowl, make a well in the middle, and sift the flour into it.<\/li>\n<li>Add the egg yolks one by one and stir the whole thing thoroughly with a wooden spoon until a thick, smooth mass forms. Keep stirring until there are no more lumps to be seen.<\/li>\n<li>Pour in the milk bit by bit and then heat the cream mixture in a pan over low heat.<\/li>\n<li>Add the lemon peel and keep stirring until the cream sticks well to the wooden spoon.<\/li>\n<li>Take the pan off the heat and fish out the lemon peel. Cover the mixture with plastic wrap and make sure the wrap really touches the cream to prevent a skin from forming. Let it cool well.<\/li>\n<li>Now start on the dough. Mix all the ingredients together in a large bowl and knead it into a smooth dough.<\/li>\n<li>Make a large ball of it, cover it with plastic wrap, and let the ball rest for at least an hour in the fridge.<\/li>\n<li>Sprinkle some flour on the counter and divide the dough in two. You use one half for the base of the <i>pasticciotti<\/i>; the other half to cover the <i>crema pasticcera<\/i>.<\/li>\n<li>Divide the dough into pieces the size of a golf ball and flatten with your hands, until the dough is about as big as a coffee saucer.<\/li>\n<li>Grease the pasticciotto baking molds with olive oil and line them with the dough. Press it in well and make sure the dough still sticks out a bit above the edge of the mold.<\/li>\n<li>Fill a piping bag (with a large nozzle) with the <i>crema pasticcera <\/i>and pipe a generous amount of cream into each mold.<\/li>\n<li>Also divide the second half of the dough into pieces the size of a golf ball and flatten with your hands, so that you can cover the filling with these dough discs. Press it in well and remove the excess dough, so that you get nice smooth <i>pasticciotti<\/i>.<\/li>\n<li>Brush the top of the <i>pasticciotti <\/i>with the beaten egg yolk and place them in the oven. Bake them golden brown in about 20 minutes in an oven at 280\u00b0C (yes, really that hot).<\/li>\n<li>Let the <i>pasticciotti <\/i>cool a bit after baking. Eat them while the <i>crema pasticcera <\/i>is still a bit warm, then they taste best.<\/li>\n<\/ol>\n<hr \/>\n<h4>Folded little pizzas from Puglia<\/h4>\n<h2>Panzerotti Speciale<\/h2>\n<p>Panzerotti are small folded pizzas with delicious fillings. They come from Puglia, where our olive oil also comes from. You can fill panzerotti with basically anything you want, but real Pugliese panzerotti are filled with local delicacies such as tomatoes, mozzarella, and basil. Panzerotti comes from the Italian word panza (belly). The buns puff up in the deep fryer like little round bellies, hence the name. In the past panzerotti were mainly made with leftover dough, nowadays people stand smiling in line for a quarter of an hour at street food hipster bars for them.<\/p>\n<p>Of course the traditional recipe for the tastiest panzerotti dough is extremely secret. Mix the two types of flour in a large bowl. Dissolve the yeast and the salt in the lukewarm water. Slowly add the yeast mixture to the flour while you knead the dough. Then add the olive oil and knead until the dough is soft and smooth.<\/li>\n<li>Divide the dough into 20 equal pieces and knead into 20 small balls. Place the dough balls on a baking sheet with baking paper, cover them with plastic wrap, and let rise for about 2 hours. They should then have become twice as big.<\/li>\n<li>When the dough has risen you heat some olive oil in a deep pan to 180\u00b0C. You can measure this with a thermometer but you can also put a wooden spoon in the oil. When you see bubbles, the oil is warm enough.<\/li>\n<li>Spread some wheat flour on the counter, put the dough balls on it, and roll them out with a rolling pin. If you don&#8217;t have a rolling pin you can also use something else with a similar diameter, such as a wine bottle ;)<\/li>\n<li>Put some mozzarella, basil, arugula, and a splash of olive oil on one half of the dough. Add the tomato puree last so that the dough doesn&#8217;t get soggy. Carefully fold the other half of the dough over the filling to form a half moon shape. Press the edge down with a fork for the final touch.<\/li>\n<li>Carefully put the panzerotti one by one in the pan with oil and turn them over after 10 seconds so that both sides are covered with oil. Fry both sides until they are golden brown (approx. 3 minutes). You pronounce it as <em>njokkie <\/em>and it is Italian for &#8220;lump&#8221;.<br \/>\n2. Gnocchi is the plural form of gnocco. So: 1 gnocco, 2 gnocchi.<br \/>\n3. Gnocchi is not pasta because it is made from potato. You can already make gnocchi with 3 simple ingredients: potatoes, flour, and salt.<br \/>\n4. Chop the florets off the romanesco, wash them, and then cook them until slightly tender in a pan with plenty of boiling water. Rinse them afterward under cold water and let them drain.<\/li>\n<li>Meanwhile cook the pasta in a pan with boiling water with some salt. Take a spacious pan and heat some <a href=\"https:\/\/olivery.com\/product\/starter-kit-basic-bottle-olijfolie\/\">olive oil<\/a> in it. Saut\u00e9 the onion and then add the pancetta. Fry until it is done. Then add the romanesco, black olives, and the cream. Season with some pepper and salt. Let the pasta sauce simmer a bit longer, to let the sauce thicken a bit. Keep stirring well, otherwise it will stick to the pan. Finally add the cooked pasta to the pasta sauce.
